Easy Carrot and Coriander Soup

So here’s a very simple soup that can be made from things that you probably have hanging around your kitchen. I only use ground and dried coriander in this recipe, but obviously, the dried can be replaced with fresh coriander if you have it.
Ingredients
1lb of carrot
1 large or 2 small onions
1 potato
1 pint chicken stock
1 pint vegetable stock
1 tsp ground coriander
2 tbsp dried coriander leaves
1 tbsp butter
Method
- Peel and chop the onions, carrots and potato.
- In a good sized pot, melt the butter and throw in the onions, heating until softened.
- Add the potato and ground coriander, stirring for about a minute
- Add the carrots and the stock and bring to the boil, at which point reduce heat, cover and simmer for approx 30 mins.
- When carrots have sufficiently softened, add the dried coriander leaves (use fresh if you have it) and blitz with a hand blender until smooth.
- Season wth salt and pepper to taste.
Best served with batch bread covered in real butter, in my oipinion.
