Glazed Lemon & Blueberry Cake

Ingredients:
4oz soft marg or butter
6oz caster sugar
6oz self-raising flour
4 tablespoons milk
2 large eggs
Dash of vanilla essence
rind of one lemon
Handful of blueberries (frozen ones are grand)
For the glaze:
3 tablespoons icing sugar
Juice of one lemon
Steps:
1. Grease a loaf tin and line it with greaseproof paper
2. Cream together the butter/marg and sugar.
3. Add eggs, lemon rind, flour, vanilla and milk. Mix well until you get a nice consistency.
4. Add blueberries and gently spoon throughout mixture
5. Put mix into tin and bake for 45 mins(ish) at 350 degrees.
6. When the cake comes out of the oven, make up your glaze by mixing the icing sugarĀ and lemon juice. Pour over the hot cake and let it soak in.
7. Leave in tin until cool and then remove
