Roj’s Hummus and “Irish Guacamole” !!!

I fairly recently discovered I love hummus and also avocado, so here are some dips that I love eating with some warm crispy, crunchy bread.  The best thing about this sort of food is it’s ready in around 15 mins, and makes a great snack or light evening meal.

 

Hummus:

  • 1 Can of Chickpeas
  • 2 Tbps Tahini paste
  • 2 Garlic cloves, crushed/minced
  • 1 Tsp Ground Cumin
  • Juice of 1/2 – 1 lemon (add to taste)
  • Olive oil  (add to reach whatever consistency you want)
  • Salt (add to taste)
  • A touch of Black pepper, if desired
  • Paprika

 

Add the drained chickpeas, tahini paste,  ground cumin,  lemon juice,  minced garlic and salt into a blender and blitz (I use a hand-blender) , adding the olive oil in stages until the consistency you desire is reached. Add salt/pepper to taste. Transfer to a bowl, and garnish with paprika and some whole chickpeas, if desired. Viola.

 

Irish Guacamole

  • 1 avocado
  • 1 shallot or half a red onion
  • Olive oil
  • Salt
  • Pepper

 

Cut the avocado in half and remove the flesh with a spoon and transfer to a bowl. Add the shallot, or red onion, finely chopped.  Add 1-2 Tbsp of olive oil and season with salt/black pepper. Blitz with a hand blender or fork until almost puree’d  (some lumps of avo are nice). Viola.

 

Serve  each of the above dips on some oven toasted or grilled flat breads or bread rolls.   Viola.
