Mussels in a White Wine and Cream Sauce

Mussels, really tasty, (usually) really cheap and simple to cook.
Other people may have different thinking on this, but I reckon 500g is a good portion of mussels for one person.
Ingredients
1kg mussels
1 glass/small bottle of white wine
2 red onions, finely chopped
20g Butter
Glug of double cream
Method
- Throw the mussels into a pot with the wine and chopped onions and stir well.
- Cover the pot and cook over a medium heat for 10 mins (which should steam cook the mussels in the wine).
- Remove the mussels from the pot, discarding any which did not open (if the don’t open after cooking, they are bad).
- Throw the butter and the cream into the remaining liquid in the pot and heat for about two minutes, stirring occasionally.
- Dump the sauce over the mussels.
Works great with some Super Chips on the side, as they are great for soaking up the delicious sauce.
